Quick Pickled Radishes Recipe: A Crisp and Tangy Treat

If you’ve grown a bunch of fresh radishes in your garden or found a vibrant bundle at the farmer’s market, pickling is a simple and flavorful way to enjoy them. Pickled radishes add a bright crunch to salads, sandwiches, tacos, or even a cheese board. They’re quick to make, require no special equipment, and are ready in just about an hour.

Let me show you how to make this easy refrigerator pickle that has become a favorite in my kitchen.



🌿 Quick Pickled Radishes Ingredients

  • 1 bunch of radishes (about 18 to 20 radishes)

  • 1/2 cup apple cider vinegar

  • 1 tablespoon granulated sugar

  • 1 1/2 teaspoons salt

  • 1 cup hot or warm water

Step 1: Slice the Radishes
Wash your radishes well and trim off the tops and roots. Slice them as thin as you can. A sharp knife works fine, but a mandoline slicer will give you perfect, even slices.

Step 2: Pack the Jar
Place the sliced radishes into a clean glass jar. A pint-sized mason jar works perfectly, but you can also use any lidded container or even a bowl if needed.

Step 3: Mix the Pickling Brine
In a measuring cup, stir together the apple cider vinegar, warm water, salt, and sugar. Stir until the salt and sugar are completely dissolved.

Step 4: Pour and Let Sit
Pour the pickling mixture over the radishes, making sure they are fully submerged. Let the jar sit at room temperature for about an hour.

Step 5: Refrigerate
After that hour, cover the jar and move it to the refrigerator. The radishes will continue to pickle and will be even more flavorful the next day. They’ll keep in the fridge for up to three weeks.
